Take time to remember the sacrifice made on behalf of all of us. Revel in the forgiveness and freedom we have been given.This is a joyous time of the year.
What's on the menu this Easter? How about herd-raised and grazed leg of lamb or maybe some custom-cut lamb chops? Do you know where the majority of lamb comes from? Much of what you see in the larger stores and restaurants arrives from Australia and New Zealand. Paul's Market lamb is domestic! Oh, and we have ground lamb to further suit your lamb needs, as well as put a tasty twist on most dishes that you would use ground beef.
We are well-stocked with delicious ham from Miller Ham Company, located in St. Louis. We guesstimate a few weeks before Easter what we will need, but the ole ham crystal ball is not always accurate, so call and reserve your ham or come get it early!
If your Easter meal does not include ham or lamb, don't worry! We will still be custom-cutting our USDA Prime and Choice black Angus steaks. Prime rib doesn't hurt either....

|Butcher Tip:Season one pound of ground lamb with salt, pepper, garlic, olive oil and a little rosemary. Roll into 1oz meatballs, making approximately 16 meatballs. Wrap a third of a slice of STL's own Behrmann's bacon (get it at Paul's) around the meatball, place on a cookie sheet and roast in the oven for approximately 20 minutes at 350 degrees. Let rest, plate and enjoy. This appetizer or quick meal goes well with cucumber sauce or mint jelly.|
